Lazy Cheese Buttons

Ingredients:

  • 1 (24-oz.) container cottage cheese
  • 2 cups flour
  • 4 eggs
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 medium-sized onion, chopped
  • 1 stick butter
  • 1 pint heavy cream (or whipping cream)
  • Bread, cut or torn into small pieces

 

Directions:

Mix together cottage cheese, flour, eggs, baking powder and salt. Drop by tablespoons onto a greased baking sheet. Bake 15 minutes at 350 degrees. (They spread into little pancake-like dough pieces.)

Meanwhile, saute onion in butter.

When dough is done baking, layer in greased casserole dish. Pour onion and butter over top, then pour cream over top. Cover with foil and bake at 350 degrees for 40 minutes. Increase heat to 450 degrees for another 10 minutes (to brown). Serve with bread crumbs that have been browned in butter.

This is so easy. Not a fat-free or low-calorie dish, but it certainly is good.
