Perfect Peanut Butter Pie

Here is another great recipe from those Naughty Nurses (Naughty Nurses BBQ out of Winfield, KS).  Below is what Greg shared about this recipe.....

In Kansas City Barbecue Society (KCBS) competitions, the entries are scored on 3 categories: appearance, taste and tenderness/texture. The highest score attainable is 180. Achieving that "perfect" score is a goal for many a cook and is recognized by KCBS by presenting the cook with a 180 pin.
I found this recipe on a BBQ forum and it was called the "Perfect Peanut Butter Pie" because his wife had gotten a perfect score in dessert with it at a contest. It lived up to it's name at the Smokin' Red Dirt BBQ contest in Enid, Oklahoma in April by winning 1st place dessert with a perfect 180 score. Kristi proudly displays her trophy and 180 pin in our living room.  The first picture is a slice when made as a pie. At Enid we made them in miniature cheesecake pans to serve the 6 judges.

Tex Mex Meatloaf

Well when looking at the weather map of the Midwest it is either Winter or Wet so I got to thinking that this might be a good time to burn off some energy indoors by mixing up this Tex Mex Meatloaf from the Naughty Nurses BBQ out of Winfield, KS.  If you can get to the store to get the ingredients – this one is sure to warm you up!  Click the recipe title to see at www.kristinashouse.com where you can find a "Print or PDF" button to easily print or save your favorite recipes.

Naughty Nurses BBQ Tex Mex Meatloaf
Ingredients:
2# ground beef
1# ground sausage
2 eggs
1 cup saltine crackers, crushed
1 medium onion, chopped
1/3 c. of each green and yellow bell peppers, chopped
1- 4 ounce can chopped green chilis
2 tablespoon Cookshack chili mix
1 tsp Kosher salt
2 tablespoons milk
Directions:
Saute onion and bell peppers until soft in EVOO.  Prepare smoker or grill for indirect cooking at 275-300° while onion/peppers cool.  Mix all ingredients until well blended.  If cooking in an oven place in loaf pans and cook at 350°. If cooking on a grill or smoker we recommend placing the loaf on Frogmats for easier handling.   Cook until internal temperature reaches 160°, about 2.5 hours on grill or smoker.   Let rest for 15 minutes then slice and serve with warmed queso. 

In talking with Greg (from Naughty Nurses BBQ) he said, "Don’t worry about leftovers, as this makes excellent sandwiches!"  I also asked him about "Frogmats" to which he shared….  "They obviously work well for things like meatloaf, also known as fatties in the BBQ world. We often use them for appetizers as we can move a couple dozen at once instead of one at a time. Cottage Pie

This recipe is from my second cousin Greg.  Both Greg and his wife are Nurses. They are also a BBQ competition and catering team! Their catering business, Naughty Nurses BBQ is based out of Winfield, KS.  Greg and his wife cater for the athletes during the McPherson (KS) Scottish Festival.  This Cottage Pie is one of the athlete’s favorite dishes.  We hope you enjoy this one too.  They do not have a recipe per se, and they use bigger pans for catering but, here is how it all comes together……..

Naughty Nurses BBQ Cottage Pie (click title to see this one at www.kristinashouse.com).

Smoked beef brisket (point works very well) shredded or chopped.
Mixed vegetables
Mashed potatoes

Mix meat and vegetables to about 1/3 the depth of your pan. A lasagna pan would work well. Add your favorite BBQ seasoning – to taste – to the meat and vegetable mixture. Sprinkle meat/vegetable mixture lightly with shredded cheddar cheese. Make mashed potatoes to your preference but add the same BBQ seasoning – to taste – to the mashed potatoes as well. Top meat/vegetable/shredded cheddar cheese layer with an even layer of the mashed potato mixture. Bake at 350° (they cook in a smoker) until internal temperature in several spots reaches 165°. At this point sprinkle top of casserole with shredded cheddar cheese and paprika before returning to the oven until the cheese is melted. Serve hot. They have also prepared this dish using pulled pork and suggest it could be prepared with poultry as well.

Chicken Tacos

Here is another great dish from my sister Suzanne.  This easy to prepare chicken taco dish cooks all day in the crockpot making dinner a snap. 

Suzanne's Crockpot Chicken Tacos
4 whole chicken breasts trimmed of visible fat (or 8 halves)
1 package dry taco seasoning (she uses the (1.25 ounce) Ortega taco seasoning mix)
8 ounces of salsa (she uses half a 16 ounce jar of On the Border salsa)
1 (10 ounce) can Rotel original
1 can southwestern corn
1 (15 ounce) can black beans (drained and rinsed)
Place all in the crockpot and cook on low 6-8 hours.  Shred chicken and stir to combine before serving with your favorite taco shells and shredded cheese.
