Apple Enchiladas

August 30, 2010

1 pk.g of flour tortillas (about 10 to 12, about the size of a tortilla or a little bigger)

1 can apple pin filling

1 1/2 sticks butter or margarine

1 1/4 cup of water

2 cups sugar

Put 1/4 cup pie filling on flour tortilla, roll up (I just use about 2-3 tablespoons - enough so I can still roll up the tortilla). Place in baking dish that has been sprayed with PAM. Bring the butter, water and sugar to a light boil. Pour over the rolled tortillas and let sit for 40 minutes. Sprinkle top of tortillas with sugar and cinnamon. (I usually just put about 1/2 cup sugar in a bowl and shake some cinnamon in it and mix up and put on tortillas). Bake at 350 degrees for approximately 30 minutes or until lightly browned.
