Creamed Eggs

              ¼ cup butter
              ¼ cup flour
              2 ½ cups milk
              6 hard-boiled eggs, peeled and chopped
              Salt and pepper to taste
              Chopped parsley or chives, optional
In a medium saucepan, melt the butter over medium heat. Add the flour and stir until smooth. Slowly add the milk. Heat, stirring constantly, until the mixture thickens. Add the eggs and heat through. Add the salt and pepper. Sprinkle with chives or parsley if desired. Serve over biscuits or toast.
