Sweet Freedom - Blueberry Cobbler

This past week my uncle, a fighter pilot for the U.S. Air Force, returned home from his most recent mission abroad. Like many other brave men and women, he has dedicated his career to protecting our freedom. Unlike some, our family has always been able to welcome and celebrate his return home.

Ronald Reagan said, "Freedom is never more than one generation away from extinction. We didn't pass it to our children in the bloodstream. It must be fought for, protected, and handed on for them to do the same."

This quote is not only applicable to the freedoms that were etched into the America's DNA  in the Bill of Rights, but it is also a stark reminder that our freedom to farm must also be fought for, protected and passed from one generation to the next.

What better way to celebrate Independence Day than with cobbler! I learned to make this cobbler from my Aunt. I hope you enjoy!

 

Blueberry Cobbler

2 Pints blueberries

1/3 C & 1/4 C Sugar

1 1/2 C Flour

2 teaspoons baking powder

1/4 teaspoon salt

1 teaspoon lemon zest

6 T cold unsalted butter

2 C heavy cream

 

Heat oven to 375 degrees F. In a 9 inch pie plate, toss the blueberries, 1/3 C sugar and 1 tablespoon flour.

In a medium bowl combine baking powder, salt, lemon zest, remaining flour and remaining sugar.

Add butter. Blend with your fingers. Add 3/4 C & 2 T cream. Blend together. Drop over berries.

Bake for 35-40 minutes.

 

Serve with remaining cream or valnilla ice cream.

 

**serves: 6-8 easily.**
