Oatmeal Scotchies

Here is another great cookie recipe with a little different flavor - butterscotch!  If you have been making oatmeal raisin or even oatmeal chocolate chip cookies a little too often - give this one a try for something new.  This makes a large batch!  My son took a few of these cookies to school in his lunch and shared them with a couple friends.  Well his friends said to bring more again tomorrow which is good because it will be a great way to get rid of the rest of them!

Oatmeal Scotchies
1-1/2 sticks butter, softened
3/4 cup sugar
3/4 cup packed light brown sugar
2 eggs
1 teaspoon vanilla extract
1-1/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon salt
3 cups quick-cooking
1 (11 oz) pkg butterscotch baking chips

Heat oven to 375°F.  Beat butter, sugar and brown sugar in large bowl until well blended. Add eggs and vanilla; beat well. Combine flour, baking soda, cinnamon and salt; gradually add to butter mixture, beating until well blended. Stir in oats and butterscotch chips. Drop by teaspoons onto ungreased cookie sheet.  Bake 8 to 10 minutes or until golden brown. Cool slightly then remove from cookie sheet to wire rack to cool completely.
