We have been making this slimmed-down version of the Big Mac once a year every year since 2006. These are fast, flavor-filled and family friendly. Even the most sophisticated of taste buds will like these at least ONCE a year! Here is how we put them together...
2 lb. extra lean ground beef separated into 1/3 c. portions. Flatten into patties. Season with salt and pepper on both sides. Place in freezer for 5 minutes.
While patties are in the freezer, combine the following and set aside:
1/3 c. light real mayonnaise
2 t. ketchup
2 t. dill pickle relish
2 t. sugar
Gather these ingredients, and set aside:
Light hamburger buns (we use Village Hearth light Italian)
2% milk American cheese slices
Onion chopped fine
Dill pickles (we like to put a few on a paper towel and dry them off with another paper towel)
Remove burgers from freezer. These come together fast, so have all your ingredients close by. Prepare griddle with nonstick spray. Fry patties on griddle. Wait until blood begins to surface before turning, and just turn them once. As you turn the patties, place the top and bottom bun on your griddle to toast the insides of the bun. As patties finish cooking, remove buns from griddle. Place cheese on top of patty to let it melt slightly. Place the patty cheese side down on the bottom bun. Place toppings of onion, lettuce and two dill pickle slices on the patty. Place a tablespoon of sauce on the top bun. Put them all together and you have a Skinny Mac!
