Corn Flake Cookies

  • 2 cups sifted flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1-1/4 cups shortening
  • 1 cup sugar
  • 1 cup brown sugar, firmly packed
  • 2 eggs, well beaten
  • 1 teaspoon vanilla
  • 2 cups flaked or shredded coconut
  • 2 cups corn flakes



Sift together the flour, baking soda, salt and baking powder. Cream together the shortening and both sugars in a bowl until light. Add the eggs and vanilla. Add the dry ingredients to the creamed mixture and mix well. Add coconut and corn flakes.

Drop spoonfuls on a greased baking sheet, an inch-and-a-half apart. Bake in a 350-degree oven for 8-10 minutes. Remove from baking sheets and let cool.
