A Great Method for Freezing Sweet Corn

We posted this method for freezing sweet corn last year on our website.  I have been freezing sweet corn this way for over 10 years with great success.  It makes a perfect side dish for holiday family gatherings and is also good to use when making Corn Chowder.  We have seen several hits coming in on this post recently.  The latest one recorded before lunchtime today came in from Kentucky.  I know a truckload of sweet corn was sitting on a farm in SW Iowa Monday night and I have seen stands all over the metro areas too while traveling recently throughout the Midwest for work.  So, the time seemed right to rerun this one for anyone who may have missed it. 

Now if you have never "put up corn" for winter – well it is easy.  And, for those of you who are experienced with freezing sweet corn but use another method – well – we hope you will give this one a try.  

When I freeze corn at my house, there is no Little Red Hen effect.  I have NO trouble getting help.  Everyone is happy to pitch in because they are already looking forward to enjoying this treat in the dead of winter.  So we hope you enjoy – not only how this method turns out and how it tastes when done – but we certainly hope you have fun as a family going through the process of freezing sweet corn!

For 4th of July - Mini Berry Pies and Ice Cream

I made these for the first time last year thinking these little red white and blue berry pies would be a hit for the kids who were coming to our 4th of July celebration – and of course they were.  These individual mini pies are SO EASY yet look very cute.  Couple that with being tasty too and you have a great little dessert.  Click the link to get the recipe…..


  4th of July Mini Berry Pies

So last summer I get a call from my Mom who invites us over to experiment with her newest kitchen gadget – a Cuisinart Frozen Yogurt, Ice Cream and Sorbet Maker.  This recipe for Mint Chocolate Chip Ice Cream is the first one we tried.  Of course I left her house later that day and quickly ordered one of those machines for myself!  The machine we were able to get was a special deal that included TWO of the freezer bowls.  This has been extremely handy to handle those recipes that make large batches but also to make fresh ice cream two days in a row.  I have made this ice cream recipe more than a 1/2 a dozen times already this year, always hoping to get a good photo to post along with recipe.  Of course with most ice cream recipes it is suggested that after you run it through the machine you then freeze it for 24 hours before enjoying.  There was the problem.  Each time I put this in the freezer for its 24 hour firm up – the bandits in my house would find it and eat it all before I could get a photo.  I was finally able to hide a batch long enough to get a good photo.  Of course after the photo was taken this bowl was eaten immediately.  We hope you will give this one a try.  Click the link to see this recipe.
