Apple Snack Cake

Do you have a midnight snacker at your house? Well this little cake might just take care of them! This is easy to make and you likely have all the ingredients right in your pantry.
CAKE
1 1/4 cups applesauce
1 c old fashioned oats
1/2 cup butter, softened
1 c granulated sugar
1 teaspoon pure vanilla extract
2 eggs
1 1/2 cups all purpose flour
1 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon salt
TOPPING
3/4 cup flaked coconut
1/3 cup packed brown sugar
1/3 cup chopped pecans or walnuts
1/4 cup butter, melted
3 Tablespoons milk
In saucepan heat applesauce to boiling on medium high heat. Stir in oats and let stand for 20 minutes.
Heat oven to 350 degrees. Spray nonstick cooking spray in 9 inch square pan. In large bowl, beat butter and sugar with electric mixer on medium speed until light and fluffy. Beat in eggs and vanilla until fluffy. Beat in applesauce mixture. Stir in flour, baking soda, cinnamon, and nutmeg just until blended. Pour into pan. Bake 40 minutes or until toothpick inserted in middle comes out clean.
In small bowl mix topping ingredients until well blended. Spread topping over hot cake and return to oven on broil for 2 minutes or until topping is golden and bubbly. Cool 30 minutes. Serve warm.
