"Muddy" Fries
1 Cheap roast
2 C Shredded Cheddar Cheese
1 Bag of Frozen Sweet Potato French Fries (Or a few fresh sweet potatoes)
1 Bottle of Coke or Diet Coke
Jalapenos
Vanilla, Chili Powder, Cayenne Pepper, Garlic Salt & Black pepper
Start by pounding the roast. Pound it with whatever you can find, your hand a rolling pin, a skillet, whatever you can find quick. Then sear the outsides of the roast. After you sear it slice it against the grain into 1/2 inch pieces. Trim off any fatty spots while you do this.
Next put all the meat and all the excess fat back into the pot you seared it in. Pour the Coke over the roast and let it cook on Medium high for 1 1/2 hours. While it is cooking add 2 Teaspoons of vanilla, chili powder, cayenne pepper, garlic salt & black pepper. When the meat has been cooking for about an hour, arrange a thin layer of fries on a cookie sheet and bake them for 30 min or until they are crispy. At this time take the meat out of the juices and place on a cutting board.
Using two forks pull apart the meat into shreds. On a plate place a layer of fries, followed by cheese, followed by meat, and top with some jalapeno slices! DELICIOUS! Don’t throw away those juices either, put them in a freezer safe container and bring them out when you need some beef stock for a soup or stew… perfect!
Beef fat freezes wonderfully, so there is no need to be wasteful! I hope that you enjoyed this "Muddy" recipe!
