Chocolate Thinny Mint Cookies

These Chocolate Thinny Mint Cookies are a favorite at our house.  These are a homemade spin off the scouts mint cookies.  These chocolate mint cookies are easy to prepare though they do require a bit of time to chill in the refrigerator before baking.  The photo shows two different ways to prepare these based on how you want them to look.   Both taste the same of course but the cookies on the left with the mint chips on top make it clear they are chocolate mint cookies.  The cookies on the right just look like chocolate cookies so the mint is a bit of a surprise when you bite into them.  Click the title next to the photo to get the recipe.

Beer Cheese Soup

The fish tacos have been a popular post - if you tried to access the site in the last couple days and had difficulty, please give it another try – after a brief outage we have it back up and running again. 

This easy Beer Cheese Soup recipe was submitted by the winner of our Christmas in July giveaway and came with these notes.......Kristina...I make this Beer Cheese Soup recipe every year during the holidays for my family.  This Beer Cheese Soup won a chili/soup cook-off and was also included in a cookbook that our company published.  I hope you like it.

When we received this recipe I could not wait to try it.  I made it for my family and served it alongside mini hot club sandwiches (instructions for these are also in the post).  We found this to be a great tasting soup.  It was quick and easy to prepare.  This is a great soup to enjoy while watching football on Sunday afternoons.  And, for those who like to imbibe while making dinner well, this recipe leaves a bit of beer in the bottle for you to enjoy as the soup simmers!  Click the title next to the photo to get the recipe.

Kristina's Fish Tacos

I created this recipe a couple years ago with inspiration from the way two restaurants serve up their fish tacos. I made these several times this past summer for family and friends. Everyone who tried them said this is a recipe to share, in fact, my mother branded these as her new favorite food.
Our local Future Farmers of America chapter will be out selling boxes of fresh citrus for their annual fundraiser very soon.  This is a great recipe to try with the fresh citrus that will be available around the holidays and through the winter. 
These fish tacos also include an ingredient that has become fashionable these days – jicama.
  Jicama is really great as it has a mild flavor that blends well with other ingredients. It provides a snappy crunch when cubed or cut in matchsticks.  And, while we suggest a certain type and brand of fish, we believe people could also enjoy preparing these tacos with fish caught from Midwest lakes or area farm bonds.
These fish tacos are healthy, offer up a sweet and spicy mix of flavors while being quick and easy to prepare.

Frost on the Pumpkin

As the saying goes – frost on the pumpkin………time to bake somethin.  - Ok I admit I made that saying up as a spin off a similar saying I heard once upon a time….but – no doubt – depending on where you are located - the arrival or anticipation of cooler weather certainly gets one thinking about doing more baking and sharing those goodies with our loved ones.  Here are a couple recipes that showcase pumpkin as the main ingredient.  So when the frost shows up on the pumpkins in your patch – well just get in the kitchen and bake up one of these treats.  Click the title next to the photo to get the recipes.        And remember….. never aim to haunt…. only aim to humor.

Canning Tomato Soup

If you are still trying to use up the last hurrah of tomatoes in your garden you might enjoy Grandma’s Canned Tomato Soup. Now – for the diehard grocery store tomato soup fans, well this has a very different flavor and feel as this includes celery and onion. This is a great soup to serve in the dead of winter with grilled cheese. This is one for the grown ups in the house so jazz that grilled cheese up by using a chewy Ciabatta or hearty Farmhouse white bread with a Gruyere, Cheddar, Fontina, Havarti or a mixture of those cheeses in the middle. To serve the soup I like to make mine creamy by stirring in a little half and half or milk, whatever I have on hand. Jenny and I got together to put up several jars of Grandma's Canned Tomato Soup so we could share some photos of this classic along with the recipe.
