Get a Taste of Farm Journal’s New Recipe Section

Anna’s Country Kitchen provides farm wives with new recipes and cooking tips. This dish called Luau Beef Roast is just in time for National Beef Month!

Nothing keeps a family, harvest crew or farm hand happy like a delicious meal. Anna Atkinson, the wife of Farm Journal founder Wilmer Atkinson, learned how to cook when the couple moved back to the farm. We credit her love of recipes to the Farm Journal cookbook legacy that is today. During the time that Farm Journal published cookbooks, the nationwide test kitchens were often referred to as “country kitchens.” No other name seemed to fit our recipe site quite like “Anna’s Country Kitchen.”

Here you will not only find recipes from Farm Journal cookbooks, you will also find original recipes from Farm Journal staff and friends. In the kids corner you will find child friendly recipes and other activities that will help children understand where their food comes from. Each week we will reveal a new featured recipe, either a revamped recipe from a Farm Journal cookbook, or a recipe from a “friend” of Anna’s County Kitchen. It is our hope that you can use these recipes to keep your crew happy!

This dish called Luau Beef Roast is a great transition from the comfort foods of the Wnter to the sweet savory flavors of Summer, and is just in time for National beef month!


From the Ice Box

1 2lb Chuck Tender Roast
1 Sliced Apple
½ Butter Stick
½ Green Bell Pepper Sliced

From the Pantry

1 Can Sliced Pineapple
2 T Onion Flakes
Montreal Steak Seasoning

Melt the butter in a skillet. Season the roast with Montreal Steak Seasoning and sear all sides of the roast in butter.

Place the roast in a crock pot. Add the apple slices and pineapple juice. Then place the pineapple slices covering the roast.

Add the onion flakes and bell pepper slices. If there is not liquid up to the edge of the roast add a little bit of water.

Turn the crock pot on high and leave cooking for 4 hours.

When the roast is tender, pull it apart and put it back in the crock pot until it is time to serve. This roast will go well with anything but I paired it with fried potatoes and corn.


**Take it to the Field**

Roll pulled apart roast, a few pieces of pineapple and a few slices of bell pepper in a tortilla. Wrap with foil and place in a tin warming dish. Serve with potato chips.
