Nobby Apple Cake

Today’s recipe comes from an old Farm Journal cookbook.

(makes 9 servings)

Ingredients:

3 tablespoons of butter
1 cup of sugar
1 cup of sifted flour
1 egg
1 teaspoon baking soda
1/2 teaspoon of salt
1/2 teaspoon of ground cinnamon
1/2 teaspoon of ground nutmeg
3 cups diced pared apples
1/ 4 cup of chopped walnuts
1 teaspoon of vanilla.

Directions:

Cream together butter and sugar at medium speed until light and fluffy. Add the egg and mix it well. Sift together the rest of the dry ingredients and add it to the creamy mixture. The batter will be very stiff. Add apples, walnuts and vanilla. Stir well and spoon it into a greased 8 inch square baking pan. Bake at 350 for 40 minutes.
