Oatmeal Raisin Crisp Cookies

Time 10 minutes

Serves 30


Ingredients
1 cup soft butter
1 cup firmly packed brown sugar
1 cup white sugar
1 tsp vanilla
2 eggs
1-1/2 cup flour
1 tsp salt
1 tsp baking soda
3 cups Old Fashioned Oatmeal (not quick cook)
1-1/2 to 2 cups raisins

How to make it
Preheat oven to 350
Grease or spray cooking sheets generously
Cream butter and 2 sugars until fluffy
Stir in vanilla then add eggs one at a time beating well after each add
Sift flour, salt & baking soda together
Add to creamed mixture
Stir in oatmeal and raisins (may need to mix by hand, I do)
Drop by rounded teaspoons 2" apart ( do not crowd they do spread) on to greased sheets
Bake for 10-15 minutes only DO NOT OVERBAKE, (they will burn and are too crispy)
Cool 1 minute on sheet before removing to racks to cool completely
